Ingredients
• 1.5 kg beef short ribs
• Salt & black pepper
• 2 tbsp neutral oil
• 1 onion, sliced
• 5 cloves garlic, crushed
• 1 tbsp ginger, grated - juice only
• 2 tbsp tomato paste
• 1 cup red wine
• 2 - 4 cups brown stock
• ½ cup hoisin sauce
• 2 tbsp soy sauce
• 1 - 2 tbsp oyster sauce
• 1 - 2 tbsp brown sugar
• 1 tsp five-spice (optional)
• 2 bay leaves

Method
1. Season and sear short ribs until deeply browned. Remove.
2. Sauté onion until caramelized. Add garlic, ginger, tomato paste; cook until brick-red.
3. Deglaze with red wine, reduce by half.
4. Return ribs. Add stock, hoisin, soy, oyster, sugar, five-spice, bay.
5. Cover and braise at 160°C / 320°F for 3 hours until tender.
6. Uncover and reduce sauce until thick and glossy.
