For the Broth:▪️3 Cups Chicken Stock▪️1 Cup White Wine▪️1 Pinch Saffron Threads▪️
.
For the Paella▪️1/3 Cup + 1 Tbsp Olive Oil ▪️3 Chicken Thighs, cut in quarters▪️12 Large Peeled and Deveined Shrimp, tails on▪️1 Chorizo Sausage, cooked and sliced▪️2 Cloves Garlic, diced small▪️1 Small Onion, diced small▪️1 Red Bell Pepper, diced small▪️2 Roma Tomatoes, diced▪️1 tsp Paprika▪️1/2 tsp Tumeric▪️2 tsp Kosher Salt▪️1/2 tsp Pepper▪️2 Cups Short Grain Bomba Rice▪️1/2 Cup Frozen Peas▪️3 Tbsp Fresh Parsley, minced▪️Lemon Wedges, for serving▪️

🌱Vegan Modification: Sub in vegetable stock for chicken stock and veggies (mushrooms, cauliflower, etc.) for chicken, shrimp, and chorizo
.
1️⃣ In a small saucepan, add the wine and chicken broth and bring to a simmer; add the saffron threads and let gently simmer for 5 mins while you cook the rest of the ingredients and then turn off the heat
2️⃣ Preheat a large shallow pan over medium high heat and add 1 Tbsp olive oil; add the chicken with a sprinkle of salt and pepper and cook until seared on both sides and just cooked through (3-4 mins per side) then remove from the pan
3️⃣ Next, sear the chorizo until browned on both sides and remove from the pan
4️⃣ Add 1/3 cup olive oil along with the onions, peppers, and garlic; sauté on medium until onions are translucent then add the spices and tomatoes and sauté for 1-2 more mins
5️⃣ Add the rice and sauté for 1 min then spread into an even layer and add the warm chicken broth + wine mixture; shake the pan so the rice settles in one even layer.. turn down the heat to low and cook for 10 mins (DO NOT stir the rice from now on)
6️⃣ Add the shrimp, chicken, chorizo, and peas on top of the rice and cook for an additional 10 mins (sprinkle some salt and pepper on the shrimp and turn them over once they turn pink)
7️⃣ Once the liquid has evaporated, you should hear a faint crackling noise (if you don’t then you can turn up the heat to medium).. let the rice crackle for ~1 min then cover with foil, turn off the heat and let rest for 10 mins (this should give you the “socarrat” crispy rice)
8️⃣ Sprinkle with fresh parsley, serve with lemon wedges and enjoy!
