This episode of REC TEC recipes features Chef Greg mixing up a little surf and turf, with REC TEC Sales Manager Matt Lane as special guest!
Ingredients:
1. Lobster tails
2. Filet mignon
3. ½ shallot
4. 1 tbsp. Tarragon
5. 1 cup white wine
6. 3 egg yolks
7. 1 lemon
8. 1 lb. melted butter
9. Olive oil
10. Ben’s Heffer Dust
11. Jody’s Asian Persuasion
Method:
Add ingredients 3-5 to cast iron skillet
Reduce ingredients 3-5 on grill at 475º until all wine is evaporated
Add ½ lemon juice to egg yolks, mix
Thicken egg yolks over boiling water
Smoke butter at 200ºF for 1 hour
Add butter slowly to egg/lemon mixture
Add ½ more lemon juice
Add shallot/tarragon mix to egg/lemon mix
Keep mix warm with pellet shelf
Season steaks with olive oil and Ben’s Heffer Dust
Season lobster tails with Jody’s Asian Persuasion
Set grill at 475ºF
Sear steaks on each side 4 minutes
Sear lobster tail 4-5 minutes
Add Béarnaise sauce to filet and lobster
