Kentucky Derby & Recipe for "Hot Brown" Sandwich

The Kentucky Derby is a cultural event that is one big party. There are so many unique, quirky aspects of it -- it's a barrel of fun!
Last weekend I went to Louisville, Kentucky and attended this Southern tradition for the first time. Horses, hats, betting and booze -- it was quite the experience.

Ingredients for the Hot Brown Open-Faced Sandwich:
-a few slices of toast (the thicker the better), crusts removed
-tomato, halved
-2 Tbsp. butter
-2 Tbsp flour
-1/2 cup whole milk
-1/2 cup heavy cream
-1/2 cup Parmesan cheese (reserve 2 Tbsp. to sprinkle on top at the end)
-a few slices of roasted turkey breast
-a few slices of crispy bacon
-paprika, for garnish
-chopped parsley, for garnish
In an oven-safe dish, put the slices of bread across the bottom of the dish next to each other. Places turkey slices on top of the bread. Add the tomato halves to the side of the slices of bread.
In a saucepan, melt the butter. Add flour and whisk constantly until it forms a paste -- this is your roux. Continuing cooking the roux while mixing for about a minute, then whisk in the whole milk and heavy cream. Continue whisking for about 2 minutes.
Take the saucepan off heat and add the grated Parmesan cheese. Season with salt and pepper. Congratulations! You just made Mornay sauce.
Pour the sauce over the turkey. Place the dish until the broiler until the cheese starts to bubble and brown just slightly. Remove from broiler and top with the crispy bacon, sprinkle on some paprika, and the parsley for garnish. ENJOY!
