Take 4 lemons, peel them and squeeze their juice, which should be around 250ml. Put a saucepan on the stove with 250ml of water and 100g of sugar and let it simmer, also add the lemon peels and a pinch of salt. Cook it for 2 minutes then let it cool and then add the lemon juice, put it in the freezer for 4 hours and every 30/45 minutes break the crystals with a fork.
