How to make Pandebono. One of the best traditional Colombian bread recipes. Pandebono is a bread made with Yucca starch or clour, cornmeal and cheese. Since we can't get the exact cheese here in the USA, we are going to use Queso fresco and Feta Cheese which is a fantastic close replacement.
2/3 Cup Cassava Flour
1/4 Cup Cornmeal - Masarepa or Harina Pan
1 Cup Queso Fresco
1 1/4 Cup Feta Cheese
1 Egg
Mix flours and cheeses in a food processor. Add in the egg and form into a big ball. Break into smaller pieces, round or loops and place on a baking sheet evenly spaced. In a 400 degree oven, cook for 15-20 minutes. Enjoy :)
