Ingredients & Process:
350-600g Various Red Peppers/Chilis (Fresno, Red Jalapeno, Bell Pepper)
3-6 Cloves Garlic
2 Tbsp Sugar
1 Tbsp Salt
Water
1 tsp Xanthan Gum (optional)
*Remove stems and cores of all peppers.
*Add sugar, salt, & water to a clean container. Add Peppers. Fill with water until all peppers are covered. Shake to distribue sugar/salt.
*Let ferment at room temperature for 4-7 days.
*Drain peppers. Blend with 1/2-1 cup of fermenting liquid. Salt to taste. Add xanthan gum for a more cohesive sauce.
*Strain blended mixture to separate into sauce & chili paste.
