Ingredients:
Onions
Olive oil
Tomatoes
Garlic
Clams
Salt
Pepper
Prosecco
Dried tomatoes
Parsley
Lardo (Lardo is an Italian speciality. It is a lightly smoked bacon, made from Mangalica)
Coriander
00:00 Peel and cut the onions. Heat some olive oil. Cut the tomatoes in half. Put the onions in the pan. Peel the garlic, cut it and add it to the onions.
02:15 Add the clams. Cut the tomatoes into small pieces. Add salt, pepper, Prosecco and add the tomatoes. Cut the dried tomatoes and add them to the pan. Cover and let simmer.
04:12 Chop the parsley and add it to the clams. Cover and let simmer. Remove the rind of the lardo. Cut it into slices, then into small cubes. Add the pieces to the clams. Add salt, pepper and coriander. Serve. Caution! Eat only the open clams, the closed ones are not safe for human consumption!
