Ingredients:-
For the Base:-
3 to 4 oranges
1/3 cup (66g) granulated sugar
½ cup water
2 tbsp orange juice
For the Cake Batter:-
3 eggs
1 cup (200g) granulated sugar
¾ cup/165 ml vegetable oil (or neutral oil)
¼ cup (60g) yogurt
1 tsp vanilla or orange extract
2 tbsp orange juice
1 tbsp orange zest
1 ¼ cup (165g) all-purpose flour
2 tsp (6g) baking powder
For the Syrup:
Remaining orange syrup
1/4 cup sugar
1/4 cup Orange juice
Instructions:-
For the Base: With the peel on, slice the oranges horizontally so you have thin crosscuts, about 3ml each. In a medium saucepan over high heat, heat the sugar, water, and orange juice until it comes to a boil. Place the oranges into the syrup. Turn the heat to medium-low and let the slices candy for 10 to 12 minutes. Turn off the heat.
For the Cake Batter: In a large mixing bowl, add the eggs and sugar. Using a whisk, mix until combined. Add the oil, yogurt, extract, orange juice, and orange zest and continue to whisk for 30 to 60 seconds. Sift the flour and baking powder over the cake mixture, mix until well combined. Line the sides and bottom of a 8-inch cake pan with parchment paper.
Preheat the oven to 350 F. Remove the orange slices from the syrup and line in the cake pan. Create a pattern as in the video. Pour the cake batter over the orange slices. Place into the oven and cook for 40 minutes until lightly browned. Test to make sure the cake is done by inserting a toothpick into the middle and ensuring it comes out clean. Once done, remove from the oven and let cool for 30 minutes. Flip the pan over on to your preferred serving plate, remove the parchment paper.
For the Syrup: In the same saucepan with the leftover syrup, add sugar and orange juice and let simmer for 2 to 4 minutes. Remove from heat and let cool for 10 to 15 minutes until just warm. Pour half of this mixture over the prepared cake, and reserve the remaining half for serving.
Serve the sliced cake with a scoop of the mascarpone cream and drizzled with the orange syrup.
