How to Make Tomato Soup (Thai Style)

Hello everyone, welcome to my cooking channel “terry-san kitchen.” Okay, this is my last soup video (at least for a while!) Instead of a normal tomato soup, I decided to use cilantro, thai red chili paste and coconut milk to give the tomato soup the flavor of Thai cuisine! You can still enjoy this soup with a slice of bread—the way they do so in England!

🥬 【INGREDIENTS】🥬
6 tomatoes
2 cilantros
4 cloves garlic
1 tbs grated ginger
1 red onion
1 cup coconut oil
2 tbs sugar
Salt, black pepper, chili pepper powder
2 cups vegetable stock
30~40g thai red chili paste
1 cup coconut milk
½ cup milk
mini tomatoes (for garnish)

🥢 【METHOD】🥢
1) Slice tomatoes, cilantro, and red onion. Slice and grate garlic and ginger.
2) Throw all fresh ingredients in a large bowl and cover with a cup of coconut oil.
3) Mix until everything is thoroughly combined. Season with salt, pepper, and chili powder.
4) Heat in an oven for 60 minutes under 180ºC or until the tomatoes shrink and wrinkle.
5) Remove the tomato mixture from the oven and transfer to a large pot for simmering
6) Add two cups of vegetable stocks (or water) and thai red chili paste in the pot and stir until fully mixed.
7) Cover with a lid and let simmer for 15~20 minutes.
8) Transfer the mixture to food processor and mix until smooth.
9) Strain the mixture back to a large pot.
10) Add coconut milk and milk to the pot and stir until smooth.
11) Simmer and stir frequently until it has the thickness you want.
12) Taste and season with salt and pepper (adjust as needed)
13) Garnish with mini tomatoes and some chopped parsley/cilantro.
