I like to prune in the Summer to reduce the growth of the tree for the following year. If you can imagine the roots are like a big battery and the leaves are the solar panels charging that battery. If you prune some of the branches off in the Summer you are reducing the charge load on that battery. This may sound like a bad thing, but it's good when you want to control the growth of the trees.
