Описание: Pickled Green Mango

Similar to my pickled papaya recipe, these pickled green and unripe mangoes are crisp, with a gently sweet and sour taste. Packed with vitamins, and more nutritious than ripe mangoes.

Serve this as a side to your favorite dishes, or enjoy as you would regular pickles. It takes just minutes to prepare and a day or so to marinate - but it's all worth it!

This condiment, snack or side can be made in a variety of ways. This is just one easy, island and delicious way to enjoy mangoes during the season.

Prep time: 10 minutes
Yield: 32 oz jar, more or less

Ingredients
•4 green unripe mangoes - peeled, sliced + pit removed
•1 tablespoon pink or regular salt, more or less
•1/2 cup water
•1/4 cup distilled white vinegar
•hot pepper (Thai chili or Bird’s eye chili) - optional
•1 tablespoon granulated sugar, more or less

Directions
•Add sliced mango to a bowl. Add salt and
stir to combine.
•Now add the mango, water, vinegar, hot pepper and sugar to a mason glass or glass container with a lid. Stir to combine.
•Make sure the mango is completely covered in the marinade mixture. Mix well by shaking.
•Refrigerate and allow the mango to marinate overnight. For best results, marinate for a few days.
•Taste the mango the next day and if needed - add more sugar, salt or chili to taste. Enjoy!

Helpful Tips
•Room temperature pickled mango that is sealed in a jar, untouched after the
initial marination, may last up to 3 months.
•Pickled mango that is refrigerated and touched may last up to 3 months. Feel
free to add more fresh mango within the timeframe to the marinade.
•Note: Pickled mango typically contains chili peppers, but it's never overbearing. Again, omit hot pepper if you prefer zero spice.
•I didn’t have dinanche or hot pepper paste, but this is an option - as both fresh chili and paste taste amazing. The salt ratio would have to be adjusted if using paste, but all preference.
•I found these mangoes at a small local grocery store. You can find them larger and possibly more green at most Asian supermarkets. These tasted just as I remember.
