Sesame Oil and Ginger Chicken
Ingredients to marinade::
(set aside for 10 mins)
300gm boneless chicken
1 inch fresh ginger, grated
1 tbsp oyster sauce
1 tbsp light soy sauce
¼ - ½ tsp five spices powder
Dash of white pepper powder

4-5 fresh ginger slices
Dark sweet soy sauce
Dark soy sauce
1 tsp cornstarch : 3 tbsp water (mix)
150 ml chicken broth (or dilute chicken stock in water)
1 fresh red chilli, sliced
Handful of fresh spring onion leaves (scallion), cut into 2 inch length
Toasted white sesame seeds
Sesame oil
Cooking oil
Method :
Heat up 2 ½ tbsp cooking oil + 1 tsp sesame oil in a wok. Add in the ginger slices and chicken. Cook for about 10 mins, keep it covered.
Add in the chicken broth (desired amount) and cook for a few more minutes over medium flame.
Now, add in some sweet soy sauce, onion pulp, 5 spices powder if necessary, dark soy sauce and combine well. Continue to cook for another 2-3 minutes over medium-low flame. The gravy would have reduced by now, then add in the onion leaves, a dash of white pepper powder, 1 ½ tbsp of sesame oil and desired amount of the cornstarch mix.
Bring the flame to high, lightly caramelise the chicken for 1-2 minutes, then turn off the flame. Garnish it with the remaining spring onion, red chilli and sprinkle some toasted sesame seeds. Combine everything together and serve with hot rice and fried omelette. Enjoy:)
