Almond Ricotta

With a few cups of almonds you can make almond milk, ricotta and flour.
🥄 Ingredients:
2 cups (300 g) raw almonds
4 cups (1000 ml) water
1/4 tsp salt
1/4 cup (60 ml) lemon juice
Lemon peels of one lemon
Fresh chives, basil leaves and pepper for topping
👩🍳 Method:
1. In a bowl, put raw almonds and soak them overnight.
2. Drain and rinse the almonds.
3. Peel almonds as presented in the video.
4. Put almonds and water to a high-speed blender and blend until finely ground and creamy.
5. Pour the mixture over a large mixing bowl covered with a cheesecloth and gather the corners. Then squeeze until all of the liquid is extracted and strain to remove the almond pulp (see point 11 how to use almond pulp).
6. Pour the almond milk into a sauce pan. Add lemon peels and lemon juice and stir gently. Heat it up to around 80°C (176° F). It should not boil!
7. Add the lemon juice and stir gently. Turn of the heat, cover and allow cooling for 30 minutes.
8. Pour the mixture into mould and let it drain for one hour. You can also pour the mixture over a large strainer covered with a cheesecloth and let it drain for 1 hour.
9. Discard the liquid and unmould the ricotta. If you don’t have the mould you can put ricotta into a bowl.
10. Chill it in the fridge.
11. You can use almond pulp to make almond flour: Put the pulp onto a baking tray covered with baking paper and dehydrate it at 80°C (176° F) for 60 minutes. Once dry, put it into a food-processor and process until finely ground. Store the almond flour in an airtight container at room temperature.
