In today's video we will be making Strawberry Lemon Cake Cups. This is a baking experiment where I make lemon cake cups, fill them with a lemon whipped cream with fresh strawberries and garnish with a strawberry fan. Wasn't sure how these would turn out, but in the end...success. Enjoy!

Yellow Cake Recipe (will have left over batter)
3 cups sifted all-purpose flour
2 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened to room temperature
1 and 3/4 cups granulated sugar
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup buttermilk, at room temperature
Add to this 1 tablespoon lemon zest
1/3 cup fresh lemon juice.
Preheat oven to 350°F
Whisk the cake flour, salt, baking powder, and baking soda together. Set aside.
Beat the butter and sugar together on high speed until smooth and creamy, about 3 minutes. Beat in the 3 eggs and vanilla extract on high speed until combined, about 2 minutes.
With the mixer on low speed, add the dry ingredients just until combined. With the mixer still running on low, pour in the buttermilk and mix just until combined.. Add zest and lemon juice. The batter will be slightly thick.
Pour batter evenly into prepared cake pans.. Bake for around 23-26 minutes or until the cakes are baked through.
Lemon Whipped Cream (can be doubled for recipe)
1 cup chilled heavy whipping cream
2 tablespoons sugar
1 tablespoon finely grated lemon peel
2 teaspoon fresh lemon juice
Combine all ingredients in medium bowl. Using electric mixer, beat to soft peaks. (Can be made 4 hours ahead. Cover and chill. Re-whisk before using.)
16 oz strawberries chopped small
Save 6 strawberries for garnish
