Slow cook on low for 8 hrs
Ingredients
1 Tbsp lard
8 to 10 pounds of pork butt ( Chuck beef or Chicken)
1 tsp salt
1 Tsp black pepper
4 Guajillo chiles
4 ancho or pasilla chiles
3 cloves of the spice
1 Tbsp Mexican oregano
1 Tbsp ground cumin
2 Tbsp chicken bouillon
3/4 cups Apple cider vinegar
1/2 cup of water
3 garlic cloves
1 large onion
3 medium bay leaves
Salsa verde slaw
16oz of Cole slaw mix (or 1 small cabbage and 1 carrot)
1 cup mayo
1 1/2 Tbsp white vinegar
1 1/2 Tbsp sugar
1 cup roasted salsa verde (unsalted)
1 Tbsp Mexican oregano
1 tsp black pepper
1/2 Tbsp of salt
Juice of 1 lime
1 green apple
Small bunch of cilantro (add the day of use)
Extras you’ll need- Buns, corn tortillas, pickled onions, lime
TIP❣️
After 8 hours of cook time, allow everything to rest for 1 hour with no heat for the best juicy, tender flavor
Slaw tastes best overnight, but can be served half an hour after making- Please refrigerate
