🔹Nylon Poha Chevdo (Thin Poha Chivda)
This is a popular Indian snack made from flattened rice (poha) that is seasoned with various spices, nuts. It’s a crispy and savory snack enjoyed by many. It’s vegan and gluten free, best for Diwali snack and for festival season.
Ingredients *
5 cups (200 grams) thin nylon poha (flattened rice)
1/2 cup peanuts
1/4 cup cashew halves
2 tbsp Daliya (roasted gram dal)
1/4 cup dried coconut chips/slices (optional)
2 tbsp raisins
2.5 tbsp oil
1/4 tsp mustard seeds (optional)
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/4 tsp asafoetida (hing)
15-20 curry leaves
4-5 hot green chilies, finely chopped
1.5 tbsp sesame seeds
1/2 tsp turmeric powder
Red chili powder (optional - adjust to your spice preference)
1/2 tsp amchur powder (dry mango powder)
Salt to taste (around 3/4 tsp to 1 tsp)
Sugar (optional, 1 tbsp to taste)
Recipe *
1. In a kadhai, dry roast nylon poha on a low to medium heat for 5-6 minutes until they’re crispy.
2. Start by heating 1 tbsp oil in a large pan or kadai over low to medium heat. Add peanuts and roast for a minute. Then add cashews, daliya, coconut chips. Sauté for 2 more minutes until everything is golden brown and take it out on the roasted Poha. In the same oil, add raisin and sauté until they puff up. Then take it out on poha.
3. Next, in the same kadhai, add more 1.5 tbsp oil, on a low to medium heat, Add cumin seeds and fennel seeds. Also add asafoetida (hing). Then add the curry leaves and green chilies. Sauté for a minute and then add sesame seeds and roast till they are light golden brown.
4. Add spices like turmeric powder and amchur powder. Mix well and don’t burn them.
5. Now, add the nylon poha and roasted stuff to the Kadhai. Add salt, Sugar.
6. Gently mix everything together and stir-fry for about 3-4 minutes. This will make the poha crispy. Once the poha is crisp and all the spices are well combined, turn off the heat.
7. Let the Nylon Poha Chevdo cool down completely before storing it in an airtight container.
