If you are a fan of meatballs, you have got to try this curry! The perfect balance between tangy, creamy, and herbaceous. This curry has it all, and the meatballs are so tender that they melt in your mouth.
Officially on my top 5 list of best curries of all time!
INGREDIENTS
For the kofta
1.5 lb ground chicken
½ cup finely chopped white onion
3 cloves garlic, finely grated
2 inches ginger, finely grated
2 tbsp chopped fresh coriander
2 tbsp chopped fresh mint
2 thai chilis, finely minced
2 slices white bread
Milk
Juice of ½ lemon
2 tsp garam masala
Salt to taste
For the curry
2 tbsp canola oil
1 medium onion, finely chopped
2 inches ginger, finely grated
4 cloves garlic, finely grated
1.5 cups, chopped fresh tomatoes
2 tsp garam masala
2 tsp ground coriander
2 tsp kasoori methi
1 tsp turmeric
1 tsp kashmiri chili powder
1 tsp ground black pepper
Salt to taste
500 ml coconut milk
Juice of ½ lemon
Fresh chopped coriander to garnish
Fresh chopped mint to garnish
METHOD
In a large bowl add all ingredients for kofta. Mix gently to combine. Form balls the size of a ping pong, and place on a lined baking sheet.
To prepare the curry, heat a pot on medium heat. Add oil, onions, garlic, and ginger. Saute until softened and translucent. Then add tomatoes, garam masala, ground coriander, kasoori methi, turmeric, chili powder, black pepper, and salt to taste. Cook until tomatoes have reduced down, separated from the oil in the pan, and are jammy in texture.
Add coconut milk and bring to a simmer. Once slightly thickened, gently add kofta to curry and cook for 8-10 minutes or until cooked through to the middle.
Off the heat squeeze in lemon juice, and garnish with coriander and mint. Enjoy!
