Today we’re making a super hot and sizzling Thai Basil Chicken — and guess what, totally oil-free!
First, we take chicken mince and give it some love with salt, pepper, Schezwan sauce, and Maggi seasoning.
Now, the veggies — fiery red chilies, spring onions, onions, Thai ginger, lemongrass, lemon leaf, basil, and some crunchy capsicum.
For the magic sauce, mix oyster sauce, light and dark soya, Maggi seasoning, chili paste, ketchup, a touch of sugar, vinegar, salt, and aromat.
Into the wok goes garlic and Thai ginger — let them bubble in water, no oil here! Toss in the chicken mince, let it soak all the flavor, then in go the veggies and a splash of chicken stock.
Time for the sauce mix — pour it in, let everything cook down. Thicken with a bit of cornflour slurry, and just before the grand finale, a dash of wine.
Serve it hot in a soup plate, garnish with fresh basil leaves — and there you have it, sexy, spicy, oil-free Thai Basil Chicken. Light on oil, heavy on flavor!"
