Rattlesnake Chili
2 Tbsp Grease
½ cup chopped Onions
½ cup chopped Green Pepper
1 clove chopped Garlic
1 lb Ground Beef
1 cup cubed Rattlesnake Meat or Chicken
2 Tbsp Chili Powder
2 tsp. Salt
1 tsp. Cayenne Pepper
8 cups chopped Tomatoes
2/3 cup Tomato Paste
2 cups Water
2 cups Macaroni
Heat the grease in a Dutch Oven. When it’s hot, cook the onion, green pepper and garlic until soft (but not brown). Add the beef and the rattlesnake meat and cook until they’re done, which will take about 5 minutes. Then stir in the spices, tomatoes, and the tomato paste. Get everything boiling, then turn the
heat down and simmer for a couple of hours. Just before you’re ready to eat, add the water and bring everything to a boil again. Stir in the macaroni and continue boiling the chili until the macaroni’s cooked (15 minutes).
This recipe should feed about six people.
We recommend serving topped with shredded cheese and sour cream! This stores great in the fridge, we've been having it for our lunches all week.
