Teres Major is another term for a shoulder tender or a petite tender, and coming off some clean, lean meat from a Bison, it's AWESOME to say the least. These cuts are from an American Bison, not a Cape or Water Buffalo... but that doesn't mean there won't be a Cape or Water Buffalo cook in a future video, so keep an eye out! Let's get em goin' !

INSTRUCTIONS:
-We're gonna marinade these bad boys. For the marinade, I'm referencing Cheoff Geoff's recipe. I watched his video and knew right away I wanted to use it for this Bison. Mix together the following:
-1/2 cup olive oil
-1 TBSP minced garlic
-1/4 cup fresh chopped rosemary
-1+ tsp whole grain mustard

• Quick & Easy All Purpose Marinade Recipe ~...
-Mix your marinade in with your Teres Major and rest in the fridge for at least 2hrs. You can go overnight, the longer the better.
-While this Bison was marinating, I made a stop at the local hardware store and saw some Traeger big game rub. Since i have 3 cuts, I'm adding some the rub to one of the three. You can use your choice of rub if preferred, or just go with the marinade.
-Get your smoker to 250f
Add your choice of wood im goin' with pecan
This is all about internal temps if you want a good medium rare- cook until an internal temp of 140f-145f. I like mine closer to the rare side, so I'm pulling these at 130f.
-Towards the last few minutes of my cook, I let the Po' Man climb to get a little bit of a sear.
-EAT!!!
