We have more harvests of beans. So we need to preserve and store them so we can have supply in winter time.
There is 4 common ways of storing our beans. #1 freezing, #2 canning, #3 Drying and #4 Fermenting. I use all these, but I do more on fermentation.
This video will show you how to ferment that will last for a year or more.
Why I love to ferment? The fermentation is the healthiest because we preserve the plants in it's natural state and we also use salt and herbs that's healthy for us. In fermentation, we cultivate healthy enzymes and prebiotics, such as Lactobacillus, which are part of our digestive system's natural flora. And it's easy and the cheapest. You don't need pots and tongs, only a jar and a lid will do.
You can do this process in the Philippines and other warm countries. When you get better at it, you can make a business out of this.
If you love pickles, this is the best. It gives a perfect balance of salt and sourness without vinegar. Try fermentation, and I hope you will love it.
