Here is the recipe:
170g/ 6oz Chorizo sausage
18g/ 1/3 cup white onion (finely chopped)
74g/ 1/2 cup red bell pepper (chopped)
4g/ 1 tsp minced garlic
46g/ 1/2 cup jalapeno (chopped)
62g/ ½ cup diced tomatoes (drained)
2g/ ½ tsp salt
2g/ ½ tsp pepper
353ml/ 1.5 cup heavy whipping cream
56g/ 4 tbsp. cream cheese (soft)
83g/ 1 cup Monterey Jack cheese (shredded)
83g/ 1 cup Gruyere cheese (shredded)
55g/ 2/3 cup Monterey Jack cheese (topping)
26g/ ¼ cup scallions (rough chopped) garnish (optional).
Preheat oven to 350F/176C degrees
In a skillet, over medium heat, cook the chorizo sausage until done (8-10 minutes)
Remove from pan and drain excess liquid.
In the same pan, add the onion, and bell pepper and sauté until tender.
Add the garlic and jalapeno peppers and combine.
Add the salt n pepper and combine.
Add the heavy cream and cream cheese then heat n stir until sauce thickens.
Reduce heat to low.
Return chorizo sausage to pan and combine.
Add the cheeses and diced tomatoes and combine.
Grab a baking/casserole dish and spray with non-stick product
Transfer mixture to the baking/casserole dish and spread evenly.
Top with the remaining Monterey Jack Cheese.
Bake @350F/176C for 15 minutes or until cheese has melted (ovens vary).
Garnish with chopped scallions (optional).
Serve hot/warm with tortilla chips, corn chips, bread slices, or your choice of fresh veggies.
PLEASE NOTE: The amount of heavy whipping cream is 353 ml or 1.5 cups..
