Описание: Today we are making Kadhi Pakora using very easy and simple ingredients. This classic desi comfort food is creamy, flavorful, and perfect for lunch or dinner. It tastes best when served with boiled rice or roti.
In this video, you’ll learn how to make smooth kadhi without lumps, crispy pakoras, and a delicious tarka step by step.
Ingredients
For Kadhi:
1 liter homemade lassi
(If lassi is not available, use 1 kg yogurt)
1½ cups gram flour (besan)
1 large onion (finely chopped)
Ginger-garlic paste
Bay leaves
Turmeric – 2 tbsp
Red chili powder – 2 tsp (or to taste)
Salt – to taste
Crushed whole coriander seeds – 1 to 2 tsp
Ground cumin – 1 tsp
Mustard seeds (rai dana) – a pinch
Water – about 1½ jugs
Cooking oil
For Pakoras:
2 cups gram flour (besan)
1 medium onion (sliced)
Green chilies (chopped)
Fresh coriander
Salt – to taste
Red chili powder
Chili flakes
Kasuri methi
Baking soda – a pinch
Ajwain (carom seeds)
Crushed whole coriander seeds
Oil for frying
For Tarka (Tempering):
Cumin seeds
Garlic (sliced)
Curry leaves
Whole dried red chilies
Green chilies
Kashmiri red chili powder
Method
In a bowl, add lassi and slowly add besan while mixing well to avoid lumps.
Add turmeric and mix until smooth.
Heat oil in a pan, add bay leaves and ginger-garlic paste.
Sauté for 1–2 minutes.
Add finely chopped onion and sauté for another 2–3 minutes until soft.
Add all spices and cook for 2–3 minutes.
Pour in the prepared besan and lassi mixture.
Add 1½ jugs of water and cook on medium to low flame.
Keep cooking until the kadhi starts to thicken.
Meanwhile, prepare the pakora batter by mixing all pakora ingredients with water to a thick consistency.
Fry pakoras until golden brown.
Once the kadhi is thick, add pakoras to it.
Prepare the tarka by heating oil and adding cumin seeds, garlic, curry leaves, whole red chilies, green chilies, and Kashmiri red chili powder.
Pour hot tarka over the kadhi.

Serve hot Kadhi Pakora with boiled rice or roti.
