Hazaragi Traditional Ash is a comforting and flavorful Afghan noodle soup made with yogurt, spinach, aromatic spices, and soft noodles. It is creamy, slightly spicy, and perfect for winter days. This homemade Ash is simple to prepare and full of traditional taste.



■ Ingredients:


• ½ kg noodles (store-bought or homemade)

• 1 bunch of spinach, washed and chopped

• 2 medium tomatoes, finely chopped or blended 🍅

• 1 chopped onion

• 1 teaspoon garlic paste

• 1 teaspoon cumin seeds

• 1½ teaspoons garam masala

• 1 teaspoon dry mint powder

• 2 teaspoons red chili powder 🌶️

• ½ kg yogurt

• 1 liter water 💧

• Salt to taste

• 2 tablespoons oil

● Optional: chili flakes, lemon wedges, fresh herbs for garnish


■ Method:


• Heat 2 tablespoons of oil in a pot.

• Add 1 chopped onion and fry until golden brown.

• Add 1 teaspoon garlic paste and sauté until fragrant.

• Add cumin seeds and fry for a few seconds.

• Add 2 chopped/blended tomatoes and cook until soft and slightly thick.

• Add chopped spinach and cook for 1–2 minutes.

• Add ½ kg yogurt and stir well. Cook for 1 minute.

• Pour in 1 liter of water and bring to a boil.

• Add the noodles and cook until they are soft.

• Add 1½ teaspoons garam masala, 1 teaspoon dry mint powder, 2 teaspoons red chili powder, and salt to taste. Mix well.

• Simmer for 2–3 minutes until everything is well combined and creamy.

• Serve hot, garnished with chili flakes, fresh herbs, and lemon wedges.
