1️⃣ Rosemary Pan Bread
Ingredients:
• 250 g (8.8 oz) all-purpose flour
• 50 g (1.8 oz) wholewheat flour
• 6 g (1 tsp) salt
• 6 g (1 tsp) sugar
• 4 g (1¼ tsp / 0.14 oz) instant yeast
• 150 ml (⅔ cup) water
• 80 ml (⅓ cup) milk
• 20 ml (1 tbsp + 1 tsp) olive oil
• ½ tbsp chopped fresh rosemary (optional)
• ~2 tbsp olive oil for the pan
Instructions:
1. In a large bowl, whisk together the flours, salt, sugar, and yeast.
2. Add water, milk, olive oil, and rosemary. Mix with a wooden spoon until no dry flour remains.
3. Cover and let rest for about 1 hour (you should see a noticeable rise).
4. Stretch and slap the dough on your counter 8–12 times to develop gluten. Use a bench scraper if needed.
5. Cover and let it rise again for another hour.
6. Place on a floured surface, fold edges to center, flip, and shape into a smooth ball.
7. Brush a 20cm (7.9in) pan with olive oil, transfer the dough, oil the top, and press it out evenly. Let rest for 30 minutes.
8. Cook covered on lowest heat for 20 minutes.
9. Flip the bread, cover again, and cook for another 10 minutes.
10. Flip once more and cook 5 extra minutes if needed.
11. Turn off the heat, leave covered for 10 minutes to steam.
12. Remove from pan and let cool.
That’s it! You’ve got a gorgeous, fluffy pan bread ready to enjoy.
2️⃣Tortillas
Ingredients:
• 500 g all-purpose flour
• 90 g lard (or shortening)
• 6 - 10 g salt
• 6 g baking powder (optional, but recommended)
• 220 - 250 ml hot water
Instructions:
1. In a large bowl, combine flour, salt, and baking powder. Mix well to distribute.
2. Add lard and crumble it into the flour using your fingers until the texture resembles damp sand.
3. Pour in about 220 ml of hot water. Mix with a wooden spoon if using boiling water; once cool enough, continue mixing by hand.
4. Knead until a dough forms and no dry flour remains. If the dough seems dry, knead around 2 tbsp more water.
5. Transfer dough to a clean surface and knead for 3–5 minutes until smooth.
6. Cover tightly and let rest for 1 hour.
7. Divide into ~70 g pieces, and shape each into a tight ball. Cover to prevent drying out.
8. On a floured surface, roll each ball into a thin tortilla—ideally until you can almost see through it.
9. Cook on a preheated dry pan over medium-high to high heat (25 - 45 seconds depending on heat). Flip when bubbles form; cook 10–15 more seconds.
10. Keep warm in a kitchen towel.

Notes:
• The baking powder helps create puffier tortillas that stay softer for longer, but you can absolutely leave it out—especially if you plan to use the tortillas fresh, straight off the pan.
• Water absorption differs depending on flour, so its better to start with a bit less and adjust as needed.
• I find that rotating tortillas by 45 deg after they have started to stretch tends to produce a more even, round tortilla.

3️⃣ Naan
Ingredients:
• 250 ml (8.5 oz) warm water
• 60 ml (2 oz) milk
• 20 g (1 tbsp) sugar
• 7 g (2 1/4 tsp) instant yeast
• 1 egg
• 540 g (4 1/3 cups) all-purpose flour
• 6 g (1 tsp) salt
• 60 g (1/4 cup) melted butter (or olive oil)
Instructions:
1. In a bowl, add warm water, milk, sugar, yeast, and egg, then mix well. Let it sit for 10-15 minutes until it becomes foamy.
2. In a larger bowl, combine the flour and salt, then add the prepared yeast mixture and melted butter.
3. Mix with a spoon until you get a thick dough, then knead it with your hands for about a minute or two until it comes together. Cover and let it rise for about an hour.
4. Once the dough has doubled in size, divide it into 12 equal pieces and shape them into balls. Let them rest for another 15 minutes.
5. Roll out each ball into your desired shape (round or oval) with a thickness of about 4-6 mm. If stacking them, dust them well with flour to prevent sticking. I prefer rolling them one by one as I cook them, to be sure they don’t stick together.
6. Cook in a preheated pan over medium heat – about 40 seconds on one side and 30 seconds on the other, until golden brown and puffy.
7. Brush the hot naan with butter or a mixture of butter, garlic, and parsley for extra flavor!
