I keep quinoa on hand because it’s easy to make and full of nutritional benefits. I usually make it in my rice cooker and use it as a simple meal or an easy side dish. This version uses simple pantry and dried ingredients but still has great flavor and nourishment.
Rice Cooker Quinoa (Single Serving):
1/2 cup quinoa (rinsed)
1/4 cup bone broth
3/4 cup water
Garlic (to taste)
Dried onion
Dried kale
Cumin (to taste)
Salt (to taste)
Parsley (fresh or dried)
Drizzle of olive oil
Add everything to the rice cooker and cook on the regular rice setting. Fluff and enjoy as a meal or a side dish.
