This Pâte Sablée aka Sweet shortcrust pastry makes the perfect French tart crust to use for your favorite tarts or tartlets, whether it's chocolate, lemon, custard cream or any fruit tart!
Ingredients:
230gr flour (AP or T55)
137 gr butter (12-14℃)
25ml Aquafaba + 10ml Vegetable oil
½ orange zest
½ lemon zest
2.5gr salt
30gr. Almond flour + 62gr. Icing sugar
1tsp Vanilla extract
Blind bake at 180°C for 15 mins. with weights, then 7-8 mins. more if you plan to bake it with the filling(frangipane) or 15-20 more if you add a no-bake filling.
