Easy Slow Cooker Chicken Tikka Masala -- Minimal Prep Required

Slow Cooker Chicken Tikka Masala:

Ingredients:
1-2 Lbs Boneless, Skinless, Chicken Thighs
1 Large Onion, Chopped
3 Cloves Garlic, Minced
1-Inch Piece of Ginger, Peeled & Grated
2 Tbsp Tomato Paste
2 Tbsp Garam Masala
2 Tsp Paprika
2 Tsp Salt
1 (28oz) Can Diced Tomatoes
3/4 Cup Coconut Milk (Regular or Light)*
2 Cups Cooked Basmati Rice

Directions:
Cut up thighs into pieces and transfer into at least a 3-quart slow cooker. Prep all other ingredients. Stir in onion, garlic, ginger, tomato paste, garam masala, paprika, salt, and diced tomatoes with the juice in the can. Cover slow cooker and set for 4 hours on high or 8 hours on low. 15 minutes before the chicken is finished cooking, mix in coconut milk. While waiting for the chicken to finish cooking, make the rice. When chicken is done, if you want a creamy thicker sauce, delicately take out the chicken and use an immersion blender to make the sauce smooth. Then put the chicken back in. The chicken should be falling apart, otherwise you can shred it yourself or leave it in small chunks. Enjoy!

Notes:
*You can use heavy cream if you don't want to or can't have coconut milk.
