In this video we show you how to make a breakfast frittata. This frittata recipe is so easy and so delicious, you'll be making it all the time! If you've never eaten one, you'll soon see that it's one of the most delicious egg recipes you can make.
Ingredients:
6 pieces of thick cut bacon
10 large eggs
1/2 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/2 onion (chopped)
1 orange, red, or yellow bell pepper (chopped)
8 oz shredded mozzarella
2 cups loosely packed baby spinach
1 tomato (thinly sliced)
Directions:
Preheat oven to 375 degrees Fahrenheit. In a mixing bowl, beat 10 large eggs and 1/2 cup heavy cream, and set aside. Chop bacon into quarter-inch pieces (cubes) and cook in cast iron skillet until brown. Drain fat from pan, except for about 1 tbs to cook other vegetables in. Return pan to heat and add chopped onion and bell pepper. Cook until turning soft, about 3-4 minutes, stirring often. Then, turn off heat, and add spinach. Continue stirring spinach in until wilted, about 2 minutes. Then, pour in mixture of beaten eggs and cream, and continue to slowly incorporate everything with egg mixture. Finally, add cheese, and stir so that everything is evenly distributed. Add thinly sliced tomatoes to top of mixture and immediately place into 375 degree oven for 20 minutes. Test center with knife to make sure cooked to preferred doneness. Let cool for at least five minutes, and then serve. Sprinkle with parmesan for added amazingness!
