We run offshore on the Norwegian North Sea to pull 120 monkfish nets. The swell is nasty and I throw up four times, but the monkfish finally show and the big ones make it worth it.

We talk through how we bleed monkfish at the gills and why we age the tails on ice for 7–10 days for the best texture.
