I had the rare chance to sit down and chat with Executive Chef Calvin Choi and even learned a few tricks from him in his kitchen! As the first restaurant in Hong Kong to introduce a charcoal grill back in the 1980s, what techniques and insights does Chef Calvin bring to cooking the perfect steak?
