In this video, I’m showing you how we make traditional Ethiopian Butter Kibeh at home using a slow, controlled process and simple, powerful spices.
Kibeh is the foundation of Ethiopian cooking and gives dishes their deep, rich, and unmistakable flavor.
We start by roasting whole spices, grinding them fresh, and gently infusing them into melted butter on low heat. This method allows the flavors to fully develop without burning, resulting in a clean, aromatic, and authentic Kibeh

Ingredients
-3 kg unsalted butter
-Kororima (Ethiopian cardamom)
-Black cumin seeds
-Garlic (3–4 cloves)
Process
Dry-roasting whole spices for maximum aroma
Grinding spices fresh for deeper flavor
Slow melting butter on low heat
Gentle infusion, no rushing
Straining for pure, infused butter
About Ethiopian Butter
Kibeh also known as Niter Kibeh, is a spiced clarified butter used in many Ethiopian dishes such as Doro Wat, Tibs, and vegetable stews. Every household has its own version, and the process is often passed down through generations.
Homemade Kibeh is richer, cleaner, and far more aromatic than store-bought versions — and once you make it yourself, there’s no going back.
