A matcha chocolate terrine made to share. The kind of dessert that belongs on a New Year’s Eve table with good friends around.
Ingredients
• 200 g unsalted butter
• 360 g white chocolate, chopped
• 30 g matcha powder, sifted
• 6 egg yolks
• 160 g heavy cream
Instructions
1. Preheat the oven to 170°C (340°F). Line a loaf pan measuring approximately 18 × 9 × 6 cm (7 × 3.5 × 2.5 inches) with greaseproof paper, leaving an overhang on the sides.
2. In a heatproof bowl, add the butter and white chocolate. Melt in the microwave in short intervals, stirring in between, until fully melted and smooth. Add the sifted matcha powder and the heavy cream, and whisk until homogeneous.
3. Add the egg yolks and whisk gently until fully incorporated.
4. Strain the mixture through a fine mesh sieve and pour it into the prepared loaf pan. Cover loosely with aluminum foil.
5. Place the loaf pan inside a larger baking dish. Pour hot water into the larger dish until it reaches about 2.5 cm (1 inch) up the sides of the loaf pan, creating a water bath.
6. Bake for about 35 minutes, until the edges are set and slightly puffed while the center remains soft.
7. Remove from the oven and let cool completely at room temperature. Cover with plastic wrap and refrigerate overnight to fully set before slicing.
