Stir-fried Eggs with Spinach, Chinese Home Cooking

This dish is easy to make with only 5 ingredients: spinach, egg, garlic/spring onion, oil and salt. Yet it's quite tasty as the natural flavours of egg and spinach are reserved via simple cooking steps and together, they enhance each other.
And with spinach being a source of iron and no smoky deep frying, this is also considered a more healthy choice comparing to some other Chinese dishes.
Ingredients:
3 bunch spinach, washed and roots removed,
2 spring onion, white part finely chopped,
3-4 eggs,
1 tsp water,
1 tbsp + 1 tsp cooking oil,
Salt to taste.
Steps:
1. Add 1 tsp water and a pinch of salt to eggs before beating them to slightly fluffy.
2. Boil water in a sauce pan and add in spinach, cook for about 1 min and drain.
3. Heat 1 tbsp of oil in wok on high and add in eggs. Stir constantly. Once the eggs are almost set, remove from heat and keep aside.
4. Heat remaining oil on high and add in spring onions. Stir until fragrant. Add spinach to wok and stir until heated through. Add eggs back to wok and mix thoroughly with spinach. Season with salt before switching off heat.
