🧺 Ingredients
For the Chicken Schnitzel:
• 2 boneless chicken breasts
• Salt & black pepper, to taste
• ½ cup all-purpose flour
• 2 eggs, beaten
• 1 cup breadcrumbs (panko preferred for crunch)
• Oil for frying (sunflower or canola)
For the Egg Tartar Sauce:
• 1–2 boiled eggs, finely chopped
• ½ cup mayonnaise
• 1 tsp lemon juice (or rice vinegar)
• A pinch of salt and pepper
• (Optional) 1 tsp fresh parsley for color
For the Raspberry Puree:
• 3 tbsp raspberry puree (fresh or frozen raspberries blended smooth)
• 1 tsp lemon juice
• 1–2 tsp jaggery powder (adjust sweetness to taste)
👩🏻🍳 Method
1. Take boneless chicken breasts and flatten them with a meat mallet (or rolling pin) until they’re about ½ inch thick.
2. Season both sides with salt and pepper.
3. Set up three bowls — one with flour, one with beaten eggs, and one with breadcrumbs.
4. Dip the chicken first in flour, then egg, and finally coat evenly with breadcrumbs.
5. Heat some oil in a pan and sear the schnitzel for about 2–3 minutes on each side, till golden and crisp.
6. For the tartar sauce — in a bowl, mix chopped boiled eggs, mayonnaise, lemon juice, salt, and pepper. Keep it chilled.
7. For the raspberry puree — combine raspberry puree, lemon juice, and jaggery powder in a small pan. Cook on low flame for 2–3 minutes until glossy.
