Better oven spring. Better crust better evryting! Do this in stead of the water going into a bread pan at the bottom. Key take aways: better convections, better heat retention in your baking stone, better result!
I have been baking Sinc e what feels like before the dawn of time :) Mistakes has been plentiful, and if you have seen the playlist bloopers, yon see that they still do :)
Like every one else I used to have a pan of water in the bottom of the oven or throw some in the bottom (that oven very nearly went where ovens go when they die) I never quite worked right.
1. In order to get some sort of vessel in at the bottom, the bread had to be further up in the oven, often leading to scorched tops and undercooked, bottoms (no it is not a rude word) and the breads not setting foot. (By setting foot I mean the bottom of the bread almost instantly forming a good crust)
2. Having a tray with water in the bottom, will cool your oven stone. (That is not debatable, don't argue with science :) This makes it more difficult for the breads to set foot resulting in wide and fairly low breads.
My mind went to how professional ovens look. And they kind of look like what you see in this video. Bread is baked on a heart, and there really isn't that much space over the bread. So I did an experiment setting my oven up like this. I even tried filling the top tray to retain more head when opening the oven. The retaining of the heat part went very well, the "where to put the water part", not so well. So I ended up with this approach. Great success! Here is what happened.
1. The top tray cooled down cascading steam about giving the breads longer time before the crust solidified thus giving the bread a prolonged oven rise or spring if you prefer.
2. When the water evaporated the top elements red gloving from working overtime to keep the oven temperature up would have scorched the breads. The tray now empty of water depresses the heat more evenly giving you a better bake
