MALANGA COCO:
Malanga is a hairy root vegetable with white flesh. Malanga is commonly used in South America, Africa, and some tropical regions. Florida is the most popular place it grows in the US. Malanga is most commonly used in stews, soups, and made into fritters. It is rich in potassium, It can help regulate and lower blood pressure. It can also prevent against conditions such as heart attack, stroke, kidney disorders, and muscle cramps.

• Malanga contains a number of different B vitamins, including riboflavin and folate.
• Regulates blood pressure
• Malanga is a great source of complex carbs. Eating it helps maintain blood sugar and provides a consistent stream of energy instead of a crash soon after your meal.
• Low on the glycemic index
Ingredients:
1. Malanga - julienne cut 1 cup
2. Carom seeds - 1tsp (Ajwain seeds or Ayamodagam)
3. Cumin seeds - 1tsp
4. Coconut oil - 1 tbsp
5. Dry chillies - 3 nos
6. Garlic pods - 1(big) if it is small 2 nos
6. Salt in taste.
Method:
1. Cut ends off and peel malanga with a knife
2. Now slice them into 1/2- inch- wide sticks
3. Mix the salt into the cold water until the salt has thoroughly dissolved.
4. Soak the malanga in the mixture for at least 30 minutes. This step removes a lot of starch.
5. Drain the salty water mixture and rinse 3 times.
6. Heat the pan and add oil.
7. Add carom(ajwain seeds) seeds and cumin seeds.
8. Add dry chillies and crushed garlic pods
9. Finally add julienne cut malanga and mix it well.
10. Add in salt to taste and cook for 20-30 minutes on low to medium flame until the malanga is soft.
11. In between do check when the malanga is cooking. Add water if it get dry.
And malanga stir fry is ready to serve.
