1/2 pound bulk sausage
6 eggs
1/3 cup of heavy whipping cream, half & half or milk
1/2 medium onion, diced
scallion to garnish (optional)
1 tablespoon hot sauce (optional)
1 1/2 tablespoon butter
1 tablespoon Olive Oil
1/2 cup cheddar cheese or cheese of your choice
1/4 cup pepper jack cheese or cheese of your choice
