I.K.E.M.E.N is an open-source fighting game based on the M.U.G.E.N game engine, only it's so much more customizable.
Not only does it contain a much more robust interface, it also has additional game modes built-in or custom-made. You can customize almost to a level of a commercial fighting game, including hidden/secret characters and command lists in the Pause menu (if available) for characters.
