Pesto & zucchini tofu scramble:
Pesto:
1/3 cup pine nuts, toasted
1/3 cup pumpkin seeds, toasted
2 cups fresh basil
1 tbsp nutritional yeast
1 garlic clove
1/4 cup olive oil
juice of 1/2 a lemon
salt and pepper
Tofu scramble:
2 tbsp vegan butter
300g firm tofu, crumbled
1/2 cup soy milk
1 tbsp nutritional yeast
1 tsp veggie stock powder
Berry breakfast crumble:
Berry layer:
2 cups frozen mixed berries
1 tsp vanilla extract
2 tbsp maple syrup
1 tbsp chia seeds
Crumble layer:
1 cup almond meal
1 cup oats
1/3 cup vegan butter
1 tbsp maple syrup
1 cup macadamias
pinch of salt
*bake for 15 mins at 180°C fan-forced
Choc hazelnut pudding oats:
Choc pudding:
3/4 cup dairy-free choc chips, melted
200g silken tofu
1/2 tbsp maple syrup
1 tsp vanilla
pinch of salt
Oats:
1 cup oats
1/3 cup hazelnut meal
1 tbsp maple syrup
1 + 1/4 cups oat milk
pinch of salt
Miso butter beans:
1 small brown onion
2/3 cup corn kernels
400g butter beans
1 tbsp miso paste
2 tsp soy sauce
juice of 1/2 a lime
1 tbsp nutritional yeast
1/4 cup soy milk (sub plant cream for extra creaminess)
*serve with fresh spring onion, coriander and/or lime
Tahini tomato toast:
Tahini sauce:
1/3 cup tahini
2 tsp maple
2 tsp soy sauce
juice of 1/2 lemon
1 tbsp nooch
salt and pepper, to taste
water, if needed, to desired consistency
Air-fried tomatoes:
1 punnet cherry tomatoes, halved
1 tbsp olive oil
1 tsp dried basil
1 tsp dried parsley
salt and pepper, to taste
air-fried for 10-15 mins, until lightly crispy
Fluffy pancakes with lemon & sugar
1 +1/2 cups soy milk
1 tbsp apple cider vinegar
1 +1/2 cups flour
3 tbsp raw sugar
zest of 1 lemon
1 tbsp baking powder
pinch of salt
1 tsp vanilla
juice of 1 lemon
