High protein seitan, one dough, endless possibilities

I love seitan: a high-protein dough that transforms into anything you want.
I’ve been making all my seitan from scratch, here is why:
Affordable: a fraction of the price of store-bought meat alternatives
Customizable: you control flavor, texture, and shape, so you never get bored
Nourishing: no fillers, just protein-rich goodness
Once you understand the technique, you’ll never need to buy expensive packaged options again.
There are 2 methods for making seitan.
1. Traditional washing method where you wash the starch and will be left with protein. This takes time and will have a relatively low yield and you are left with lots of starch (to make noodles). It is really fun to do!
Method 2. Quick method using ‘vital wheat gluten’ which is the protein separated from the starch by the manufacturer. This is the easy method for high yield :) I am using method 2 in this video.
Here are my favourite seitan shapes:
1. golden schnitzel
2. crispy spicy chick’n tenders
3. chick’n shreds
4. minced meat
5. deli slices
6. juicy balls
