For my last cook of 2023 I decided to smoke a Brisket. Christmas Brisket will be my new jam! I had plenty of issues during this cook. Everything from very large wood splits to maintain my temps. The look, smell, and taste was on point thanks to a simple seasoning of Smoked Sea Salt and Black Pepper. But the tenderness was no where near there. Thanks to my son Tyrell for cooking the rest of Christmas dinner with a very tasteful Filipino Them. Enjoy.
