Is focaccia hard to make? Not if you have the right recipe! You'll get a thin, crispy crust on the outside and a cloud-like soft interior with pockets of flavor from sun-dried tomatoes. It's the kind of bread that makes you feel like a pro baker even if it's your first time.
This is a no knead focaccia recipe. That's right, perfect result without even the need to knead. It's also a same day focaccia bread, it will be ready in no time.
To make this no knead focaccia bread, you will need the following ingredients:
Bread flour - 2¾ cups (350g)
Water - 1 cup + 3 tbsp. (280ml)
Fresh yeast - 2⅓ tsp. (7g) or dry yeast - 1¼ tsp. (4g)
Salt - 1¼ tsp. (8g)
Olive oil - 1½ tbsp.
Sun-dried tomatoes - ⅓ cup (40g)

The dimpling technique helps distribute the air bubbles evenly, giving you that perfect airy texture. This focaccia is so fun to make!
Thin, crispy crust
Soft as a cloud inside
What would you stuff it with?
Water - 1 cup + 3 tbsp. (280ml)
Fresh yeast - 2⅓ tsp. (7g) or dry yeast - 1¼ tsp. (4g)
Mix well
Bread flour - 2¾ cups (350g)
Salt - 1¼ tsp. (8g)
Mix until there's no more dry flour
Just mix, no need to... knead
The dough is very wet
Olive oil - 1½ tbsp.
Mix until completely incorporated
Cover and let rest for 30 minutes
A timer will tell you when it's time for the next step
With a wet hand, stretch the 4 sides of the dough
And fold them to the center
Water will prevent sticking
Lift the dough and slap it back
I call this move "lift and slap"
It's super effective!
Another 30-minute rest
Sun-dried tomatoes - ⅓ cup (40g)
Chop into smaller pieces
These are tomatoes from my garden
Preserved in olive oil
They will add incredible flavor!
Add them to the dough
Repeat the steps from earlier
Stretch and fold the 4 sides
Lift and slap
The dough holds together nicely
Rest for 10 minutes
Grease the pan with olive oil
Be generous
Transfer the dough into the pan
Drizzle with a little olive oil
Try to spread the dough
The 10-minute rest makes this easier
Cover and let rise for 30 minutes
So wobbly!
That's right, drizzle with olive oil
Now for the fun part
Dimple the focaccia with your fingers
It will better distribute the bubbles
Sprinkle with a little water
Just a little coarse salt on top
The salt is optional
Bake at 440°F (230°C) for 20 minutes
Smells delicious!
Transfer to a cooling rack
Beautiful golden color
Thin, crispy crust
Now let's see inside
Perfect!
Incredibly soft inside
