Chicken Leg Quarters Recipe
Ingredients
• 4 ¼ lbs. (4 chicken leg quarters)
• 3 tablespoons of olive oil
• ½ tablespoons johnny’s seasoning salt (you could also use creole or all-purpose seasoning)
• 1 teaspoon lemon pepper seasoning blend (salt free)
• 1 teaspoon paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon fresh/dried thyme
• 1 teaspoon smoked paprika
• 1 teaspoon of salt (salt to taste)*
• 1 teaspoon of black pepper (pepper to taste)*
• Fresh parsley for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C).
2. Rinse the chicken leg quarters under cold water and pat them dry with paper towels.
3. In a small spice bowl, mix together the paprika, garlic powder, onion powder, thyme, smoked paprika, johnny’s seasoning salt, salt, and black pepper.
4. Rub the spice mixture all over the chicken leg quarters, making sure to coat them evenly.
5. Place the chicken leg quarters in a single layer in a baking dish or roasting pan, then drizzle with the olive oil.
6. Bake in the preheated oven for 50-60 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.
7. Remove the chicken from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley if desired.
Garlic Turmeric Rice Recipe
Ingredients
• 4 cup basmati rice
• 5 - 6 cups Chicken Stock (low sodium), or water.
• 2 tablespoon olive oil
• 2 cloves garlic, minced
• 2 teaspoons ground turmeric
• 2 tablespoons of butter (unsalted)
• ¼ teaspoon of salt (salt to taste)*
• 1 bay leaf
Instructions
1. Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming too sticky.
2. In a medium saucepan, heat the olive oil over medium heat.
3. Add the minced garlic and ground turmeric sauté for 1-2 minutes, or until fragrant and slightly golden.
4. Pour in the chicken stock and bring the mixture to a boil.
5. Add the rinsed Basmati Rice, salt, butter and bay leaf to the saucepan. Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 15-20 minutes, or until the rice is tender and the water has been absorbed.
6. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam and fluff up.
7. Fluff the rice with a fork and garnish with fresh parsley/cilantro if desired before serving.
