How to Make Risotto with Crawfish/Langostino - Episode 79

Описание:
Risotto (Arborio Rice) – 1 cup
Extra Virgin Olive Oil – 2T
Onion – 1 medium – chopped
White wine – ½ cup – OPTIONAL
Soy Sauce – 1T
Chicken Stock – 4 cups (1 box) – pre-heated on stovetop– could substitute water
Crawfish or Langostino Tails – frozen – 1 lb.
Parmesan cheese – ½ to ¾ cup grated.
Sautee onion in olive oil until translucent.
Add rice and toast lightly.
Add white wine and stir till mostly absorbed.
Add chicken stock about ¾ cup at a time and stir till absorbed.
Keep adding stock till almost all absorbed.
You can add a little hot water if the risotto not completely cooked when you are done with the stock.
When rice is done, creamy and pretty soft, but with a little bite (al dente), add seafood and parmesan.
Serve!
