This recipe uses a hot and cold water dough, plus a flavorful roux filling with Sichuan peppercorn for the authentic aroma.

Dough
• 2½ cups all-purpose flour
• 90g hot water
• 90g cold water
• 1 teaspoon sea salt
• 1 tablespoon oil
Roux Filling
• ½ cup oil
• ¼ cup flour
• Pinch of Salt, Sichuan peppercorn and White pepper
Other
One scallion, chopped.
Make the Dough:✨
In the stand mixer, add the flour and sea salt. Slowly pour in the hot water while stirring, then add the cold water and mix until a shaggy dough forms.
Add the oil and knead until the dough becomes smooth and soft. This takes about a few minutes. Cover the dough and let it rest for at least 15 minutes.
Make the Roux:✨
Mix the oil and flour and stir constantly until smooth. Season with a pinch of salt, crushed Sichuan peppercorn, and white pepper.
Once the dough has rested, divide it into equal portions. Roll one portion into a thin sheet and spread a thin layer of the cooled roux evenly over the surface. Sprinkle with finely chopped scallions. Roll the dough tightly into a spiral circle then flatten gently and roll it out again into a pancake shape. Repeat this process with the remaining portions of dough.
Cook each pancake until golden brown and crispy on both sides. Remove from the pan and slice into wedges. Serve immediately, on its own or with a simple dipping sauce such as soy sauce, black vinegar, or chili oil.
