(This works great for venison.)
🇯🇲 CURRY DEER (VENISON) RECIPE
INGREDIENTS :
2–3 lbs deer meat (venison), cut into medium pieces
Lime or vinegar (for washing meat)
SEASONING :
2–3 tbsp Jamaican curry powder
1 tbsp all-purpose seasoning
1 tsp salt (adjust to taste)
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp ground pimento (allspice)
2 sprigs thyme
1 stalk scallion (chopped)
1 Scotch bonnet pepper (whole or chopped for heat)
1 medium onion (chopped)
3 cloves garlic (crushed)
FOR COOKING :
2 tbsp vegetable oil
1 tsp turmeric (optional, for color)
Water or beef stock (as needed)
2 potatoes (optional)
INSTRUCTIONS :
Wash the deer meat with lime or vinegar and rinse well.
Season meat with curry powder, all-purpose seasoning, salt, black pepper, garlic powder, onion powder, paprika, pimento, thyme, scallion, onion, garlic, and Scotch bonnet.
Mix well and marinate at least 2–4 hours, overnight is best (deer meat is lean).
Heat oil in a heavy pot and burn the curry for about 30–60 seconds to release flavor.
Add seasoned deer meat and stir to coat evenly.
Cover and let the meat sweat for about 10 minutes.
Add enough water or beef stock to cover the meat.
Reduce heat, cover, and cook for 1½–2½ hours, stirring occasionally, until meat is tender.
Add potatoes (optional) during the last 20 minutes.
Let gravy reduce and thicken. Taste and adjust seasoning.

Deer meat cooks best slow and low
Marinate overnight for softer texture
