Cracked Conch from Cayman Islands
500 gr Conch meat
1 egg
2/3 cup butter milk
Garlic powder
adobo
paprika
2 cups of flour
cayenne pepper
4 cups of oil
1 cup of mayo
1 lemon
2 limes
olive oil
tenderize the conch meat with a hand tenderizer or a kitchen mallet, butterfly cut the conch meat and tenderize again. cut the meat into small chunks.
in a bowl combine the egg with the buttermilk, 1 tsp of garlic powder, 2 tsp of adobo, ½ tsp of paprika and mix well. add the conch meat ensuring that it is all coated and let it marinate for 30 minutes.
in a separate bowl add 2 cups of flour along with a dash of garlic powder, a dash of paprika, a dash of adobo and mix it all together.
grab pieces of the conch meat and add them to the flour bowl to coat them in it. and set aside.
heat up the oil almost to its smoking point and fry the conch in batches for 3 minutes or until golden brown. set to drain in paper towel and sprinkle some lime juice on top.
for the dipping sauce combine the mayo, 1 tsp of cayenne pepper, 1 tsp of paprika, 1 tsp of olive oil, the juice of 1 lemon and whisk together.
