Fish Curry (Machi ka Salan) – Ingredients
For the Fish:
Fish (Singhara/Catfish or any choice) – 1 kg
Oil – ½ cup (for frying)
Soaking liquid – water mixed with salt and vinegar (to remove smell)
For the Curry/Gravy:
Fenugreek seeds (Methi) – ½ tsp
Curry leaves – 10–12 (optional)
Onion paste – 1/3 cup (about 2 medium onions, ground without water)
Ginger-garlic paste – 1 tbsp
Yogurt (Dahi) – ½ cup (approx. 125–130 ml) or 2 ground tomatoes
Water – 1 cup (250 ml), adjust as needed
Fresh coriander leaves – for garnish
Green chilies – for garnish
Spices:
Salt – 1 tsp (or to taste)
Red chili powder – 1 tsp
Roasted cumin powder – 1 tsp
Kashmiri red chili powder – 1 tsp (for color)
Turmeric powder – 1/3 tsp
Coriander powder – 2 tsp
Dried fenugreek leaves (Kasuri methi) – 1 tsp
Garam masala powder – ½ tsp
